Inama Azienda Agricola Foscarino Soave Classico
Foscarino is Inama's interpretation of the Soave Classico that looks back to ancient times. It recalls ancestral traditions in order to revive forgotten aromas. Selection from old vines, more than 40 years old. The vineyards are located in the Monte Foscarino: basaltic-volcanic soil and south-east exposure of the vines.
It opens fresh, mineral, deep, with fragrant field flower notes (camomile, elderflower, iris). On the palate is rich, complex and multilayered with an almond finish. With the passing of time, these notes transform into even more complex aromas of pollens and dried flowers.
Grape variety: 100% Garganega.
Vinification: Destalking and crushing are followed by skin contact for 8 - 12 hours. After the grapes are pressed, the must is allowed to settle for 12 - 24 hours. Alcoholic and malolactic fermentation take place in barriques not new. Prior to racking, batonnage is carried out every 4 weeks for about 6 months. Fining for 6 months in stainless steel, filtration through a coarse filter (without fining) occurs prior to bottling.
Best served with: Baccalà with polenta, fish soup, risotto.
