Gianfranco Fino Se' Primitivo
The Primitivo "Se" is the last pearl of Gianfranco Fino, the last pearl of one of the most charming wineries in Italy. A cellar that in recent years has established itself in the national and world thanks to the elegance of its wines, products able to rediscover and enhance the terroir of Puglia.
The baby brother of the Es, the Se Primitivo is more immediately accessible and is a more food friendly offering from Gianfranco Fino.
Tasting Notes
There's an opaque, inky core to this wine that starts off with jammy plum and raspberry aromas, mixing with a sheen of iodine and spice. Initially, it's thick in feel on the palate, with flavors of prune, raisin and dried leaves, yet superracy acidity and bracing tannins roll across to clean it up.
Grape: Primitivo
Ageing: 9 months in barrique for 50% new and 50% first-pass, then at least 6 months in the bottle.
Pairing: Perfect wine to combine with first and second courses based on red meats. In particular, it can be paired with one of the most typical dishes of Salento or the pieces of horse meat with sauce.
