Tasting Notes

The grapes are harvested from the most mountainous vineyards of the area, mainly around the village of Fytia at an altitude of up to 650m. The vineyards are 25 years-old, non-irrigated and certified organic.

Naoussa region has a warm continental climate, tempered by the cooling winds coming either from Vermio mountain or from the sea. Lower temperatures linked to high altitude, and big diurnal range during ripening season offer freshness and elegance to the wines.

Xinomavro is a very tannic variety that Thymiopoulos “tames” with slow and gentle extraction. Ageing takes place in large oak barrels, allowing the purity of the variety to emerge. An extremely elegant red wine, with pronounced aromas of sweet cherry, wild rose, tomato, tea leaves and earth.

Grape variety: 100% Xinomavro. 

Vinification: Grapes are macerated for 18 days with a small percentage being whole cluster, fermented with indigenous yeasts for 1 to 3 months. Maturation takes place for  8 months in French oak vats.
