Yield of just 45 hectoliters per hectare with non sulfite fermentation with indigenous yeasts and bio-protection (by using non saccharomyces yeasts to avoid brettanomyces.) 15% of the blend comes from a carbonic maceration. Daily punch downs until a density of 1020, then pumped over. 3 months aging in concrete tank, filtration & bottling. Certified Organic.
