100% Chenin Blanc and declassified as Vin de France, this is part of the limited bottled ”Les Dissidents” range.
Following a number of experiments, a whole instinctive range comprised of micro-cuvees and varietal wines, produced by the appellation, in truly exclusive, libertarian style. A limited number of bottles with a choice of what the winemaker believes to be the best varieties of soil, this unclassified range of French wine defies the institutions, their regulations and conventional wine.
Yield of only 25 hectoliters per hectare on white limestone and clay soils. Non sulfite fermentation with indigenous yeasts and bio-protection (by using non saccharomyces yeasts to avoid brettanomyces.) Fermentation in 20 HL foudre at 18°C without malolactic fermentation and ageing 6 months in 1,600 litre clay jars.
Tasting Notes
Ripe nectarine, apricot and fleshy peach with a tropical edge, this is lively with a juicy core and persistent finish. Lovely depth of flavour in the mid-palate and it really lasts on the finish. Boasting a heavy bottle, with a gorgeous lemony floral perfume, this wine literally fills the mouth with a dazzling dance of clotted cream and white citrus, baked pears and almonds. It unfurls in the glass, offering up dried chamomile flowers, and a touch of crème brûlée. Would definitely stand up to a spicy Asian-inspired dish or fresh fish and herbs. Stunning!
