Gianfranco Fino 'JO' Negroamaro
JO produced by Gianfranco Fino is an exclusive wine because it is a great negroamaro produced in the area where the primitivo is normally the king. Its name originates from both Jonico, which is the side of the Salento peninsula where the area of Manduria is located and where the vineyards that give rise to this wine are located. And then again Jonico because in the past this was the name with which the Negroamaro blend was called.
Tasting Notes
JO appears in the glass with an intense ruby red color, very intense. On the nose, notes of dark flowers stand out that blend with fruity ones, plum in the first place and a pleasantly spicy finish. In the mouth it is expressed with extreme freshness and a well-modeled tannic texture that is balanced with the softness of the wine, giving it depth and an aromatic persistence. The retro-olfactory sensations refer to notes of Mediterranean scrub, tobacco leaves, toasted cocoa beans and leather. The persistence is very long and well supported by vigorous but not too intrusive tannins.
Grape: Negroamaro
Ageing: After about 12 months of aging in wood, the wine without the aid of clarifiers and without filtration and without tartaric precipitations is bottled and after about six months of aging it is released for consumption.
Pairing: Perfect wine to combine with first and second courses based on red meats. In particular, it can be paired with one of the most typical dishes of Salento or the pieces of horse meat with sauce.
